Prosciutto Wrapped Radicchio with Balsamic Fig Reduction

Ingredients
  • 3 heads radicchio, quartered
  • 1/4 pound Prosciutto di Parma, thinly sliced
  • 3 dried figs, finely chopped
  • 1/2 cup balsamic vinegar
  • Olive oil, for brushing
  • Salt and pepper, to taste
Instructions

Preheat a grill or grill pan over medium heat.

Wrap each section of quartered radicchio with a slice of prosciutto. Brush each bundle with olive oil, season with salt and pepper and grill 6-8 minutes, turning frequently, until prosciutto is crispy and radicchio is tender.

Meanwhile, place figs and vinegar in a pot and bring to a boil, then reduce heat to simmer. Reduce until thickened, 6-8 minutes.

Arrange radicchio on a serving platter and spoon the balsamic reduction on top. Serve immediately.
