Apple Peach Prosciutto and Mozzarella Skewers

If you have Prosciutto di Parma (of course you do), a bounty of fresh produce and you’re searching for ideas, look no further than these skewers with fresh fruit, prosciutto and mozzarella by Lauren Grier of Climbing Grier Mountain. This recipe is ideal for a quick grab-and-go snack or impromptu appetizer – your guests will think you spent hours in the kitchen. Don’t worry, your secret is safe with us. A modified caprese on a stick with peaches, apples, basil, prosciutto and mozzarella – what could be better?

  • 18 fresh basil leaves
  • 18 fresh mozzarella balls (mini)
  • 9 slices Prosciutto di Parma, cut in half
  • 2 medium apples, sliced
  • 2 medium peaches, sliced
  • Olive oil, for garnish
  • Salt and pepper, to taste
  • 9 skewers

Take a skewer and thread one basil leaf followed by one mozzarella ball, half slice of prosciutto, one apple slice, one peach slice, one basil leaf, one mozzarella ball, and one-half slice of prosciutto. Repeat process for remaining skewers. Garnish the tops with olive oil, salt and pepper.
