Ingredients
- 4 large zucchini, sliced into rounds
- 4 slices (8 ounces) Prosciutto di Parma
- 2 tablespoons store bought pesto
- 4 ounces burrata cheese
- 2 tablespoons toasted pine nuts
- Salt and pepper to taste
Instructions
Preheat your grill to medium high heat and grease with olive oil.
Grill zucchini until slightly charred, about 2-3 minutes per side. Remove from grill and transfer to a serving platter. Season with salt and pepper.*
Cut each slice Prosciutto di Parma into ribbons.
Drizzle zucchini with pesto and top with dollops of burrata. Sprinkle with pine nuts.
Drape with slices of Prosciutto di Parma and serve immediately.
*You can also toss your zucchini in olive oil and roast in the oven on a greased baking sheet at 400 degrees for 15-20 minutes. Raise heat to broil for 2-3 minutes until zucchini are golden brown.
