Couscous Salad with Pesto, Arugula and Prosciutto di Parma

Ingredients
  • 2 cups pearled couscous, cooked according to package instructions
  • ¼ cup store bought pesto
  • ¼ cup chopped pistachios
  • 2 ounces goat cheese, crumbled
  • 2 ounces (4 slices) Prosciutto di Parma
  • 4 cups/large handfuls arugula
  • Salt and pepper to taste
Instructions

In a large bowl, combine couscous with pesto, pistachios and goat cheese. Season with salt and pepper to taste.

Add arugula and prosciutto and stir to combine.

Transfer to a serving bowl.
