Ingredients
- 2 cups pearled couscous, cooked according to package instructions
- ¼ cup store bought pesto
- ¼ cup chopped pistachios
- 2 ounces goat cheese, crumbled
- 2 ounces (4 slices) Prosciutto di Parma
- 4 cups/large handfuls arugula
- Salt and pepper to taste
Instructions
In a large bowl, combine couscous with pesto, pistachios and goat cheese. Season with salt and pepper to taste.
Add arugula and prosciutto and stir to combine.
Transfer to a serving bowl.
